There's more than cheese in Gouda! The Dutch town is also home to a less well-known, yet equally glorious treat - the Stroopwafel. Although these caramel cookies originated in Holland, some people call them English Stroopwafels. Stroopwafels or Siroopwafels are syrup (stroop) waffles made with two paper-thin, coaster-sized wafers sandwiched together with a layer of cinnamon-caramel syrup. They're delicious with a touch of whipped cream, a scoop of ice cream and perfect served with coffee or tea. For a real treat, place a stroopwafel on top of a cup of coffee or tea, and allow the cookie to warm a bit - just enough to soften the caramel filling.
